Handmade Bread in 90′: Easy and quick recipe!

This is a recipe I love! It  has made my life easy and my family very happy! I will share with you the quickest recipe ever, so that you can have the tastiest bread in 90 minutes!

I grew up with two mothers from Epirus, the little known paradise of NW Greece.
 
There is a “King” of eating habits up there called pies! So, mastering the “dough” is vital.
I could talk for hours and hours, naming feelings of my childhood when I was covered in flour while baking delicious pies with my aunt Mahi!
 
Feelings of joy, creativity, love, easiness…!I was a very lucky girl to have tasted such delicious pies in my life! I came to adore any kind of dough, bread included!
 
Everyday life though,leaves me no time for handmade bread.
 
My kids are eating bread from the bakery store. It is definitely not bad, but not as tasty and quality bread as I wish iy was!
 
That was until I have been given this very EASY and very QUICK homemade bread recipe!
 
Believe me when I say easy and quick in a such intense manner! 
Yes!!! VERY easy and Quick!
 
Since I tried this recipe I got addicted to bread! Of course I don’t bake every day because…. I have a life to live you know, but I make this bread at least once or twice every week, on our family weekend meals.

On the other hand, if you are an at home mum you can literally make this bread everyday!
 
It only takes 90 min from start to finish and only a few, simple ingredients!
 
I am not a professional cook or baker and probably this is the most important reason you have to trust me when I say…it’s easy…JUST DO IT!
 
So, let’s play!

Ingredients List:

  • Bread flour or all purpose flour (we ‘ll use 600-700 gr)
  • Dry yeast (1 sachet)
  • 1 tsp honey or ½ tsp granulated sugar
  • Salt (at least 1 Tsp) depends on your liking
  • Water (2 glasses lukewarm water)
  • Oil (1 Tsp)
  • Some sesame seeds if you like it

How to:

To activate the dry yeast use a small basin and pour 2 glasses of lukewarm water, add the yeast, the honey and 1-2 Tsp of flour. Stir well and let it activate for 10-15 min. Cover with a cloth in a relatively warm spot of your kitchen counter.
 
The yeast is active if after those 10-15 min  has bubbles on it. If it doesn’t you should repeat the step with another sachet of yeast, otherwise your bread will not rise in the oven.
 
When activated, you can begin to add the rest of the flour in batches. Use your hands to incorporate all the ingredients.
 
The quantity of flour you will need is never precise. It depends on the humidity of the flour and of the environment. But, it will be approximately 700gr.
 
The final dough should be ready when it doesn’t stick on your hands. At the same time it shouldn’t be “over-floured” leaving a dry feel.
 
Knead the dough for 1 or 2 min on your clean kitchen counter and then form a ball.
 
Pour a few drops of olive oil in the bottom of your basin and place your dough again in it. Pour the rest of your olive oil in your hands and caress the dough.
 
Cover it and let it rise for another 15 min (or more) in a warm place.
 
That’s it! In 15 min the dough is ready to “enter” your “oven Kingdom”.
 
Preheat the oven at 180  degrees C.
 
Shape the dough the way you like, sprinkle some sesame seeds on it and bake it on a baking sheet for about 45 min. The time depends on your oven. It shouldn’t take more than an hour!
 
Your bread is ready when you “knock on it” and it sounds like knocking on an empty box!
That’s my bread!!!

Important Notes!

Don’t part the dough in two pieces. This quantity makes only one good bread loaf.

When ready don’t let it in the oven. Take it out and let it cool, otherwise it will become mushy due to your oven’s humidity.
